In the few moments in life where sal y limón aren’t there to save the day, you can count on salsa to be around.

This habanero salsa, which we built today’s special (Cochinita Pibil w/ arroz con gandules) around, is gorgeously hot. Its fruity, sweet flavor is bright and engaging even in, or rather, especially in small doses. Throw on too much and you’ll have a bigger mess than the previous run-on sentence.

We hope to make this a regular item once we get beer and wine up in this female dog. For now, tho, hurry up and get some.

The cochinita pibil is an old family recipe my grandfather brought over on the Mayflower–braised pork with achiote, infused with citrus and covered in banana leaves. We’re serving it with rice an’ pigeon peas (gandules) for 8 dollars American. Puro yum!
